What's Cooking Hawaii Season 2 Episode 2

2 C apple juice *

1 1/2  T  agar flakes

1-2 C fruit chunks of choice

Pour juice into a saucepan and sprinkle in the agar flakes.

Allow the agar to soften, about 3 minutes.

Bring juice to a boil , stirring to dissolve the agar.

Cover, reduce heat and simmer 10 minutes.  

Take off of heat and let sit for about 10 minutes to cool a bit.

Then add in fruit pieces and  pour into a mold or 4 dessert dishes. Let sit at room temperature to set. 

Then cover and chill before serving.

Makes four 3/4 -1 C portions

* other juices can be used - ie. dark cherry/berry juices are nice as well  with berries

Sunburst melon

Yogurt

Granola

2-4 T honey

 

Homemade Granola

 

4 C rolled oats

1/2 C wheat germ or flax

1 tsp. cinnamon

1/4 tsp. salt

 

2 T macadamia nut or coconut oil

1/4 C honey

1/4 C apple juice

1 C assorted dried fruit of choice

1/2 C shredded unsweetened  coconut, sunflower or pumpkin seeds

In a large bowl, mix together the oats, wheat germ, cinnamon and salt.

In a liquid measuring cup, combine the liqiuid ingredients and stir well. Pour over oat mixture and toss to coat everything evenly. Spread in an even layer on a cookie sheet and bake at 325 degrees for 15 minutes, then reduce heat to 185 degrees and bake for 10-15 minutes more or until nicely brown and crisp.  Mix in the dried fruit and coconut.  Cool and store in an airtight container.

Cut melon in half and clean out seeds.

Fill with yogurt of choice, then top with some granola

and a drizzle of honey.

Watermelon Lemonade

2 C watermelon, cut into small cubes

1 T fresh lemon juice

2-3 tsp. honey

Blend all together until smooth.
Chill before serving.
