Hy's Cherries Jubilee

Yield: 1 portion



1T unsalted butter

1/2 cup granulated sugar

juice of 1/2 lemon

3oz kirschwaser(cherry brandy)

3oz brandy

10 cherries and its accompanying juice(equal to 1 small can of cherries)

pinch of ground cinnamon

zest of 1 whole orange studded with 8pieces of whole cloves

1/2 cup vanilla ice cream


1) Heat a sauté on medium heat and add in the butter

2)When  butter melts, add in the sugar and lemon juice and stir until the sugar dissolves completely

3) Add in the cherries and juice and remove the pan from the burner place the brandies in a large ladle and place over the burner until the alcohol ignites

4) Hold the orange zest with a fork in one hand while gently ladling the flaming alcohol over the zest into the pan of cherries

5) Once all of the alcohol has drizzled down into the pan, sprinkle on a little cinnamon and reduce the product until a thick syrup forms and ladle over the ice cream
