Noh Foods  Coconut Cake

Yield: 1- 9" by 12" pan



½ cup soft butter

½ cup granulated sugar


1 package(2oz) NOH brand instant coconut milk

2 ½ cups AP flour

½ tsp baking powder

1tsp baking soda

¼ cup granulated sugar

1 ½ tsp salt


1 egg

½ cup sour cream


1cup water

½ honey


1)    Cream the butter and sugar using a wisk in a large bowl and set aside

2)    Sift the instant coconut milk powder, flour, baking powder, baking soda, sugar, and salt together and place in a container and set aside

3)    Add the egg and sour cream into the creamed butter and sugar mixture and wisk in until combined

4)    Mix the honey and water together in a separate container and set aside

5)    Add 1/2 of the sifted flour mixture to the bowl and wisk until combined

6)    Add in the water and honey mixture and wisk until combined

7)    Add in the remaining sifted flour mixture and wisk until there are no lumps remaining

8)    Place the mixture into a pan atleast 2" deep that has been sprayed with a pan release spray, or buttered, or brushed with oil

9)    Bake at 350 degrees F for 35 minutes or until the center of the cake is firm and when a toothpick or skewer is inserted it comes out clean with no raw batter

*****Cut and serve warm when it is at its softest but may be difficult to cut as it will be so soft, you can let it rest for 45 minutes then it will be easier to cut. If you are going to chill it, the cake  will get harder in the refrigerator but can be heated quickly in the microwave for 20 seconds and the cake will become warm and supersoft again. This cake is not overly sweet so you can serve it with ice cream, whipped cream, or any type of sweet syrup like maple or agave.
