Ewa Sweet Onion Jam

Yield: 4 cups



1/4 cup salad oil

3 onions julienne

2T butter

1/2 cup strong beef stock

1/2 cup brown sugar

1/2 cup red wine vinegar


1) Heat a large sauté pan on high and add in the oil, when lightly smoking add in 1/2 of the onions and sauté until caramelized, add in the butter and remaining onions and sauté for another minute

2) Deglaze with the stock and wine and stir well to remove the brown fond from the bottom of the pan

3) Add in the sugar and turn the heat to low and simmer until almost all of the liquid is evaporated, then set aside to cool for 10 minutes

4) Place the cooled mixture in a food processor and puree until smooth and store chilled

**this is s great condiment for sandwiches, burgers, and hot dogs!!
