What's Cooking Hawaii - Khao Op Sapparot - S5E2

Khao Op Sapparot-Pineapple Fried Rice

Yield: 4 portions

Ingredients:

1 pineapple

2T salad oil

½ cup lup chong diced

2T butter

1tsp curry powder

½ cup small diced onions

3 cups cold cooked rice

½ cup chopped green onions

1 tomato small diced

½ cup raisins

1tsp sugar

2T soy sauce

  1. Cut the pineapple in half lengthwise and neatly scoop out as much flesh as possible without breaking the skin, set the skin aside and small dice the flesh and discard the core
  2. Heat a medium sized saute pan on high and add in the oil and lup chong, saute the lup chong until slightly crispy and remove the lup chong and set aside
  3. Add in the butter and curry powder and stir to combine, then add in the onions and saute for 1 minute
  4. Place the rice in a small bowl and sprinkle on the sugar and shoyu and loosen the rice, then add it to the hot pan and saute
  5. Add in the remaining ingredients including the pineapple and saute until golden brown, place the cooked rice back into the dug out pineapple skins and garnish with the cooked lup chong
