Yield:8 cups


1 galwater

2#chicken, pork, or beef bones or a combination

1pccheese cloth 18" by 18"(optional)

¼ onion

2" pcof ginger

1 pc oflemon grass tops

1 pccinnamon stick

1tspcoriander seeds

1tspfennel seeds

2pcsstar anise


1pcwhole cardamom or ½ tsp cardamom seeds

Salt orfish sauce TT

Sugaror honey TT

  1. Place all of the ingredients in a pot or into the cheese cloth,tie the ends of the cheese cloth and place in the pot of water , bring to aboil the reduce to a simmer for 2 hours
  2. Strain the liquid and then season to taste
  3. Garnish with blanched rice noodles, thinly sliced beef, slicedonion, cilantro, bean sprouts, thai basil, hot sauce and hoisin
