What's Cooking Hawaii - Baeksoelgi-tteok - S5E4

Baeksoelgi-tteok(SteamedKorean Rice Cake)

Yield:1-8" round cake

Ingredients:

4cups flour

4T water

1/4cup sugar

1Tsalt

1/2cup pre soaked azuki beans

1/2cup brown sugar

1)Place the rice flour in a bowl and sprinkle on the water and mix thoroughlyuntil small lumps form

2)Place the mixed rice flour into a sifter or strainer and sift into a bowl

3)Fold in the sugar and salt and place the mixture into an 8" steamer basket

4)Place the pre soaked azuki beans into a food processor and pulse until coarselyground

5)Sprinkle the ground azuki beans on top of the rice mixture as evenly aspossible  and sprinkle the brown sugar on top of the azuki beans as evenlyas possible

6)Place the steamer basket on top of a pot of boiling water or in a steamer for 45minutes

7)Remove the basket from the steamer or pot and allow it to chill for 30 minutesbefore eating

***placeraw dried azuki beans in a container with enough water to cover the beans andallow them to soak for 8 hours or overnight
