What's Cooking Hawaii - Ulu Guacamole - S5E5

Ulu Guacamole

Yield: 4 portions



1/2 cup small diced Ewa Sweet Onion

1/2 cup small diced tomato

1/4 cup chopped cilantro

1T minced garlic

1tsp salt

1T lemon juice

1cup ulu puree

1/2 cup small diced avocado


1) Place the onion, tomato, cilantro, garlic, salt, and lemon juice in a bowl and mix well fold in the ulu and diced avocado, season with more salt if desired and serve chilled with your favorite chips


Ulu Red Curry

Yield: 4 portions



1/2 cup coconut cream

1T Thai red curry paste

1/2 cup long beans cut into 1" lengths

1/2 cup red bell pepper cut into 1" diamonds

1/2 cup zucchini cut into 1/2 moons 1/4" thick

1 cup pre cooked ulu cut into 1" cubes

2 cups coconut milk

1T fish sauce

1T brown sugar

1pcs kafir lime leaf minced

1/2 cup Thai basil leaves


1) Heat a large sauté pan on high and add in the coconut cream, when the coconut cream crackles, add in the curry paste and stir until there are no lumps

2) Add in the long beans, red bell pepper, zucchini, and ulu, and sauté until each item is coated with the curry mixture

3) Deglaze the pan with the coconut milk, add in the fish sauce and palm sugar and stir well, allow the products to simmer for a couple of minutes and add in the kafir lime leaf, when the vegetables are almost fully cooked, turn off the heat and add in the Thai basil, stir to fully incorporate the basil and serve immediately
