What's Cooking Hawaii - Modern Crepe - S5E8

My modern version of the classic Crepe

Yield: 20 – 30 pcs

This is my modern version ofthe crepe. This recipe creates a slightly sweeter stronger crepe that can bemade thinner than the original.

Ingredients:

3cups water

¼ cup sugar

1cup heavy cream

3 cups flour

4 whole eggs

2 egg yolks

¼ cup melted butter

  1. Combine allingredients in a bowl and mix well
  2. Strainthe mixture if lumps form
  3. Heata small non stick pan on medium heat and spray the bottom with a release spraylike Pam or Vegaline
  4. Addin 2oz(quarter cup)of batter and swirl the pan to allow the batter to cover theentire bottom of the pan and cook for 1 minute
  5. Turnthe crepe over using  spatula and cook for another minute before removingfrom the pan
  6. Youmay stack the crepes on each other making sure to separate each crepe with apaper towel or parchment paper
  7. Fillthe crepes with your favorite fruits in season, honey, whipped cream, and evenyogurt!
